Ingredients (9)

0.00 rice — wild with split peas
6.00 spring onion — chopped
0.00 cucumber — halved
1.00 red pepper — finely chopped
65.00 ml fresh parsley — chopped

15.00 ml sugar
15.00 ml curry powder
180.00 ml fresh chillies — 573
30.00 ml vinegar — balsamic

Method:

Bring water to the boil. Add rice mixture, boil rapidly, uncovered for 30 minutes, drain, rinse under cold water and
drain well. Place cooked rice in a bowl and add spring onions. Cut cucumbers in half and scoop out seeds with a teaspoon.
Slice cucumber thinly and add to rice with peppers and parsley. Combine all dressing ingredients. Before serving, add
dressing to the rice and mix well. Serve cold.
