Wholewheat sesame triangles

  • 500
    wholewheat flour
  • 300
    cake flour
  • pinch sugar
  • 5
  • 15
    instant yeast
  • 65
    olive oil
  • 250
    lukewarm water (or more)
  • sesame seeds


Preheat the oven to 190 ºC (375 ºF). Spray a baking sheet with non-stick spray. Mix the wholewheat flour, cake flour, sugar, salt and instant yeast in a large mixing bowl. Add small quantities of the olive oil and lukewarm water and mix until the dough is soft but not sticky. Knead for 10 minutes until the dough is smooth and elastic. Shape into a circle and place on the prepared baking sheet. Cover with greased plastic and leave in a warm place to rise until doubled in bulk. Remove the plastic, brush with water or egg white and sprinkle with sesame seeds. Bake for 20 minutes or until the loaf is done. Break into wedges and serve with Greek beef stew (see recipe).
