Wholewheat pasta, chickpea and mozzarella salad

  • 1
    onion cut into thick slices
  • 1

    red pepper, cubed
  • Fatis and Monis Wholewheat pasta boiled and drained
  • Cubed Mozzarella Cheese
  • Coriander
  • 1
    Greek yoghurt
  • 1
    lite mayonnaise

Sauté the olive oil and onions (add a pinch of sugar) over medium heat until the onions turn light brown and are slightly caramelized.
Add the pepper and 1 finely sliced chilli.
Drain the can of chickpeas and add to the onions.
Season with salt, pepper and chilli flakes.
Allow to heat through on medium heat until all the flavours get well acquainted.
Serve on a bed of pasta topped with a scattering of coriander and cubed mozzarella cheese.
Lastly drizzle with dressing made with 1Tbs Greek yoghurt and 1Tbs lite mayonnaise.
