Wholewheat bread with chicken and bean sprouts

  • 1
    cooked chicken breast, deboned
  • 30

    Dijon mustard
  • 15
    lemon juice
  • butter
  • 8
    slices wholewheat bread
  • 1
    tomato, thinly sliced
  • half an avocado, thinly sliced
  • alfalfa sprouts
  • salt and pepper to taste


Dice the chicken breast and mix with the mayonnaise, mustard and lemon juice.
Butter the wholewheat bread slices and top half of them with thin slices of tomato and avocado, followed by the chicken mixture.
Scatter a few sprouts on top.
Cover with the remaining bread slices.
Add grated apple and a few sultanas to the chicken mayonnaise filling.
