Ingredients (12)

1.00 eggs — lightly beaten
250.00 ml milk
250.00 ml flour — wholewheat
5.00 ml Baking powder
10.00 ml wholegrain mustard
20.00 g butter — melted
30.00 g salmon — roe
fresh chives — to garnish
HERBED SOUR CREAM
125.00 ml sour cream
5.00 ml fresh basil — chopped
5.00 ml fresh chives — chopped
5.00 ml lemon juice — or lime juice

Method:

Stir egg into milk. Sift flour and baking powder into a bowl, stir in egg mixture and beat to form a smooth batter.
Stir in mustard and butter.
Heat a greased, heavy-based pan on top of the stove and drop teaspoonfuls of batter into it. Cook until bubbles appear on surface, then turn with an egg lift. Cook until lightly browned. Remove from pan and cool.
HERBED SOUR CREAM: Combine ingredients in a bowl. Spread cream on each blini, top with salmon roe and garnish with chives.
