Ingredients (10)

160.00 g soup — mixture, dried pies, lentils and barley
3.00 carrots — large, sliced
3.00 celery stalks — chopped
3.00 spring onions — or medium onion, sliced
oil
500.00 g marrow bones — or beef shin
3.00 potatoes — large, sliced
3.00 tomatoes — peeled, diced
2.00 water — boiling
salt and freshly ground black pepper

Method:

Soak the soup mixture in cold water overnight. Pour off the water.
In a large saucepan, sauté the vegetables, except the potatoes and tomatoes, in a little oil until soft. Add the marrow bones or shin and stir-fry lightly. Add the potatoes, tomatoes and drained soup mixture, pour in the boiling water and simmer slowly until the soup mixture is soft and the soup is quite thick. Season to taste with salt and pepper. Serves 6-8.
