Wholesome soup

  • 160
    soup mixture (dried peas, lentils and barley)
  • 3
    large carrots, sliced
  • 3
    stalks celery, chopped
  • 3
    spring onions (or a medium onion), sliced
  • oil
  • 500
    marrow bones or beef shin
  • 3
    large potatoes, sliced
  • 3
    tomatoes skinned and diced
  • 2
    litres boiling water
  • salt and pepper


Soak the soup mixture in cold water overnight. Pour off the water. In a large saucepan, sauté the vegetables, except the potatoes and tomatoes, in a little oil until soft. Add the marrow bones or shin and stir-fry lightly. Add the potatoes, tomatoes and drained soup mixture, pour in the boiling water and simmer slowly until the soup mixture is soft and the soup is quite thick. Season to taste with salt and pepper. Serves 6-8.
