Ingredients (13)

30.00 ml fresh chillies — 573
1.00 spring onions — chopped
1.00 celery stalks — chopped
2.00 ml curry powder
50.00 g walnuts — chopped
50.00 g apricots — dried, chopped
45.00 ml breadcrumbs — white
15.00 ml fresh parsley — chopped
5.00 ml lemon — zest only
1.00 lemon juice
1.00 chicken — whole
salt and freshly ground black pepper
oil — for brushing

Method:

Heat the oil in a pan and sauté; the spring onion and celery until soft.
Add the curry powder and stiré;fry for another two minutes.
Remove from the heat and add the remaining filling ingredients.
Season the chicken inside and out with salt and pepper and fill the cavity with the filling.
Brush the chicken with oil and place in a preheated 180 ºC oven. Roast for about one hour or until the chicken is done.
