White chocolate macaroons

  • 250
    ground almonds
  • 420
    icing sugar, sifted
  • 4
    egg whites
  • 30
    castor sugar
  • 200
    white chocolate
  • 12


Preheat the oven to 170 °C.
Mix the ground almonds and icing sugar.
In a separate bowl, whisk the egg whites to a stiff peak and add the castor sugar.
Fold into the nut mixture.
Line a baking tray with non-stick baking paper and spread the mixture into 7 cm circles.
Bake for 15 to 18 minutes until crisp and moist underneath.
Leave to cool on a cooling rack.
Melt the chocolate and dip half of each almond into it; put in the fridge until the chocolate has set.
Top each macaroon with melted chocolate and a nut.
Leave until chocolate has set before serving.
