Ingredients (5)

1.00 Litres cream
240.00 g castor sugar
120.00 g white chocolate
1.00 vanilla — pod
12.00 eggs — just the yolks

Method:

Scald (heat to below boiling) the cream with the castor sugar, white chocolate and vanilla pod until the chocolate melts.
Allow to cool to room temperature. Mix in the egg yolks. Pass the mixture though a sieve.
Preheat the oven to 150 &degC.
Divide the mixture between six ramekins and place in a baking tin with high sides.
Pour in enough water to come halfway up the sides of the ramekins.
Bake the desserts for about one hour, then remove from the oven.
