WHISKY APPLES
30.00 ml butter
6.00 apples — Golden Delicious, peeled and cored
30.00 ml sugar
1.00 orange — zest ony
1.00 cinnamon — stick
200.00 ml orange juice
60.00 ml whiskey
GINGER ICE CREAM
500.00 ml cream — thick
500.00 ml milk — full cream
10.00 ml vanilla — essence
15.00 ml fresh ginger — minced
250.00 ml sugar
salt — pinch

Method:

WHISKY APPLES: Heat butter in a frying pan until golden, add apples (sliced into eighths) and sauté for 1 to 2 minutes. Sprinkle with sugar, add orange peel and cinnamon stick and stir in orange juice and whisky.
Cover with a lid and simmer gently until apples have softened.
Remove lid, increase heat and cook briskly to reduce sauce.
ICE CREAM: In a large mixing bowl stir together all ingredients (unwhisked), until sugar dissolves. Pour into a freezer container and freeze for 1 to 2 hours or until starting to firm.
Place in a food processor fitted with a steel blade and process for 30 seconds. Freeze for 1 to 2 hours, then process again for 30 seconds.
Transfer to a serving bowl and freeze until needed.
