Ingredients (6)

250.00 ml water
100.00 g castor sugar
600.00 g watermelon — flesh, deseeded
2.00 lime — zest only
vodka
lime — wedges

Method:

Bring water and sugar to the boil, stirring until sugar dissolves. Set aside to cool.
Purée watermelon in a blender and measure 500 ml of purée. Combine purée, lime juice and cooled syrup. Pour into a plastic container. Freeze overnight, or for at least 4 hours, until frozen.
To serve, cut the frozen watermelon ice into chunks and blend quickly until it becomes slushy. Add a dash of vodka, if desired. Serve immediately with a wedge of lime.
