100.00 g prunes — pitted, dried
100.00 g apricots — dried
80.00 g raisins
100.00 ml rum
500.00 ml milk
100.00 g flour
120.00 g castor sugar
10.00 ml cinnamon — ground
3.00 eggs — large
50.00 g almonds — flaked
0.00 icing sugar

Method:

Soak the prunes and apricots in water overnight, and drain.
Soak the raisins in the rum.
Drain and reserve the rum.
Grease a 20 cm square baking tin.
Scald the milk. Mix the flour, sugar and cinnamon, and slowly beat in the eggs and milk. Stir in the rum.
Arrange the fruit in the dish and pour over the batter.
Bake in a preheated 180 °C oven for 45 minutes or until golden and a skewer comes out clean.
Sprinkle over the nuts and grill for two minutes or until nuts are golden.
Cut into 12 squares and serve sprinkled with icing sugar.
