Ingredients (10)

250.00 ml oil
20.00 ml lemon juice
10.00 ml fresh ginger — freshly grated
2.00 fresh chillies — sliced
410.00 g white beans — tinned, drained
50.00 g butter
1.00 onion — large, finely sliced
5.00 ml turmeric — ground
5.00 potatoes — peeled, sliced
350.00 g spinach — shredded

Method:

Mix oil, lemon juice, ginger and chillies (or 5 ml ground crushed chillies) together. Add beans and marinate for 15 minutes.
Meanwhile, heat butter in a large frying pan. Add onion and turmeric and fry over medium heat for 3 minutes. Add potatoes and fry for 10 minutes or until soft. Add spinach, a little at a time, until it is wilted. Stir in beans and cook until heated through. Season to taste and serve as a side dish or vegetarian meal. Serves 4.
