Warm potato and broccoli salad

Ingredients (10)

olive oil
16.00 baby potatoes — parboiled
3.00 garlic — cloves, sliced
salt and freshly ground black pepper
500.00 g broccoli — broken into florets
150.00 g feta cheese
1.00 red onion — chopped
DRESSING
fresh chillies — 573
vinegar — white wine or balsamic
salt and freshly ground black pepper

Method:

Heat oil in a large frying pan.
Add potatoes (peeled or unpeeled, as desired) and garlic, and sauté over moderate heat until crisp and golden. Season with salt and pepper.
Meanwhile, steam or boil broccoli in a little water until cooked but still crisp and bright green. Don’t overcook.
Toss all cooked vegetables together in a bowl. Carefully stir in crumbled feta cheese and onion.
DRESSING: Drizzle oil and vinegar over salad and season to taste.
Serve warm.
