Warm leeks vinaigrette

  • chicken stock to cover
  • 8
    leeks, washed
  • fresh Parmesan shavings
  • VINAIGRETTE

    olive oil
  • 30

    white wine vinegar
  • 30

    balsamic vinegar

    ml
    wholegrain mustard
  • 2
    ml
    mustard powder
  • 5
    ml
    mayonnaise
  • 2
    ml
    sugar
  • salt and milled pepper to taste
 

Method

 
Bring, chicken stock to boil, add leeks and cook until just soft, about 8 minutes. Meanwhile, whisk vinaigrette ingredients together. Drain leeks and arrange on a platter. Pour vinaigrette over still-warm leeks. Top with shavings of Parmesan cheese and serve. TOTAL KILOJOULE COUNT: 5 440 kJ (1 300 Cal). A portion: 1 360 kJ (325 Cal).
