Warm chicken salad with garlic croutons

Ingredients (9)

3.00 chicken — portions
instant marinade — chicken
2.00 garlic — cloves, quartered
65.00 ml oil
4.00 bread — sliced white, crusts removed
sea salt and freshly ground black pepper
salad dressing — Italian
1.00 lettuce
parmesan cheese — shavings

Method:

Brush the chicken portions with the marinade and marinate for at least 1 hour. Heat the garlic cloves and the oil until warm, remove from the stove and cool slightly. Remove garlic with a slotted spoon and reheat the oil. Fry the bread cubes in the fragrant oil until light-brown and crunchy and drain on paper towelling. Leave to cool. Grill the chicken portions until just cooked and slice into strips. Arrange the lettuce on a large platter or 4 individual plates and arrange the chicken and croutons on top. Moisten the salad with a little salad dressing and mix lightly. Sprinkle cheese slices and pepper on top and serve immediately with extra dressing.
