Warm cheesy biscuits

  • 100
  • two-thirds of a cup flour
  • one-third of a cup fine-ground polenta
  • 40
    pecorino, grated
  • genorous pinch of ground cloves
  • genorous pinch of nutmeg
  • ¼ tsp coarse black pepper
  • ¼ tsp salt
  • 1
    extra-large free range egg yolk
  • 1 to 3 Tbsp iced water


1. Place the butter, flour, polenta, pecorino, spices and seasoning in a food processor and pulse until the mixture resemble breadcrumbs.
2. Add the egg yolk and enough ice water so that the mixture forms a ball when processed.
3. Remove the dough from the food processor and roll into a sausage shape.
4. Wrap in cling film, refrigerate for 30 minutes.
5. Preheat the oven to 180½ C. Gently cut the dough ?sausage? with a sawing motion into 5mm slices and lay them out on a sheet of baking paper on a baking tray.
6. Bake for about 10 minutes or until golden. Allow to cool slightly before serving.
