Warm Fruit Salad

  • 1
    mixed fresh fruit (plums, apricots, nectarines, pineapple, guavas, pears or apples)
  • 100
    light brown sugar
  • 100
    dry white wine or apple juice
  • 1
    whole dried ginger
  • 12
    toasted flaked almonds to decorate


Preheat the oven to 180°C and spray a baking pan with nonstick spray. Cut the fruit in half and remove the seeds (do not remove the guava seeds and any other seeds that are hard to remove - they will be easy to remove once the fruit has been roasted). Do not peel, except for pineapple.

Spread the fruit out in the pan and sprinkle with the sugar and wine or apple juice. Add the ginger and bake for 20-25 minutes or until the fruit is just tender and the peels start to wrinkle.

Drizzle once or twice with the pan juices during baking. Remove the ginger, sprinkle the almonds on top and serve warm, with or without low-fat yoghurt.
