Ingredients (8)

250.00 g butter — softened
180.00 g brown sugar — soft
2.00 eggs — large, beaten
280.00 g flour — self-raising
200.00 g walnuts — coarsely chopped
125.00 g raisins
5.00 ml vanilla — essence
90.00 ml maple syrup

Method:

Preheat the oven to 190 ºC (375 ºF). Grease a couple of baking sheets with margarine or spray with non-stick spray.
Cream the butter and brown sugar together until light and creamy. Gradually add the eggs and beat well.
Sift the self-raising flour and add to the sugar mixture, alternating with the walnuts and raisins. Also add the vanilla essence and maple syrup and mix well.
Drop spoonfuls of the mixture onto the greased baking sheets, allowing room for them to spread. Flatten slightly with a fork.
Bake for 10 to 12 minutes or until pale brown.
Allow to cool slightly on the baking sheets before transferring to a wire rack to cool completely.
Store in an airtight container.
