Waldorf salad

  • 4
    green apples, cored and sliced into thin wedges
  • 4
    red apples, cored and sliced into thin wedges
  • 60
    lemon juice
  • 125
    chopped walnuts
  • 125
    seedless raisins
  • 6
    (to 8) celery stalks, chopped
  • 250
  • 250
    plain yoghurt
  • 1
    lemon, rind
  • few spring onions, chopped


Mix the apple wedges with the lemon juice to prevent discolouration.
Reserve a few apple wedges and mix the rest with the walnuts, raisins and celery.
Blend the mayonnaise with the yoghurt, add the lemon rind and mix with the apple mixture.
Spoon into a salad bowl and garnish with apple wedges and chopped spring onions.
Serve alongside a green salad with vinaigrette dressing.
