Ingredients (10)

2.00 eggs — extra-large
400.00 ml milk
1.00 waffles — instant mix
apple sauce
4.00 Granny Smith apples — peeled, cored, sliced
125.00 ml apple juice
30.00 ml raisins — seedless
60.00 ml brown sugar — soft
cinnamon — pinch, nutmeg,ground cloves and black pepper
10.00 ml lemon — zest only

Method:

Beat the eggs and milk together and add to the dry sweet mix. Mix well to form a smooth batter. Drop spoonfuls of the batter in a hot waffle pan and bake as described on the pack. Place the apples, juice and raisins in a glass bowl. Cover and microwave on 100 per cent power (HIGH) for 10 minutes. Cool slightly, place apple mixture in a food processor and process to a smooth purée. Add the sugar, spices and lemon rind to the Purée, Microwave uncovered for another 8 minutes to allow the flavours to develop. Serve the waffles with a spoonful of the hot apple sauce and cream or ice cream.
Serves 6-8.
