Vienna sausages with potatoes and sweetcorn

    potatoes, boiled in their jackets
  • 1
    onion, finely chopped
  • 5
    Vienna sausages, sliced
  • 410
    cream-style sweetcorn
  • 1
    egg, whisked
  • salt and pepper
  • 5
    chilli sauce

Preheat the oven to 180ºC (350ºF). Spray an ovenproof dish with non-stick spray. Peel the potatoes and slice. Arrange in the bottom of the prepared oven dish. Sauté the onion in a little oil until tender and add the Vienna sausages. Stir-fry for another minute. Remove from the heat and add the sweetcorn and egg. Mix, season with salt, pepper and the chilli sauce and pour over the potatoes. Bake for 20-30 minutes. Serve with a salad. Serves 4.
