Vienna sausage bake

    onion, finely chopped

    ripe tomatoes, skinned and chopped

    brown sugar
  • salt and pepper to taste

    fresh breadcrumbs

    cake flour

    chopped parsley

    vienna sausages, sliced

    creamstyle sweetcorn


Preheat the oven to 180 ºC (350 ºF). Grease a 22 x 26 cm ovenproof dish with margarine. Sauté the onion and tomato in a little oil until most of the liquid has evaporated. Season with brown sugar and salt and pepper to taste. Turn the mixture into the prepared dish. Combine the breadcrumbs, cake flour and parsley. Season to taste with salt and pepper. Sprinkle half the breadcrumb mixture over the tomato mixture and arrange the sliced sausages on the breadcrumbs. Top with sweetcorn, spreading it evenly. Sprinkle the remaining breadcrumb mixture over the corn and bake for about 25 minutes until pale brown. Serve with a green salad. Serves 4-6.
