5.00 ml salt
500.00 ml flour — cake
10.00 ml mustard — powder
cayenne pepper — pinch
250.00 g butter — diced
500.00 ml cheese — grated

Method:

Combine the dry ingredients in a mixing bowl. Add the diced butter and rub in with your fingertips until the mixture resembles breadcrumbs.
Add the cheese, mix and shape the mixture into a ball.
Alternatively, the pastry may be prepared in a food processor. Place the dry ingredients in the processor, add the diced butter and grated cheese and process until the mixture forms a ball around the blade. Remove, shape into a ball and cover with plastic wrap.
Chill for 30 minutes and use as needed. Divide the pastry into three equal pieces.
Line two 24 cm pie dishes with the pastry and reserve the third for grating over the tart.
Press the pastry onto the bottom and along the sides of the pie dishes. Freeze shells until needed or bake with filling of your choice (see mushroom savoury tart and apple pie recipes).
Makes enough pastry for two pie dishes.
