Ingredients (11)

1.00 bread — brown or wholwheat, sliced
margarine
50.00 ml cottage cheese
15.00 ml walnuts — chopped
1.00 courgettes
cheddar cheese — grated
1.00 eggs
25.00 ml milk
salt
freshly ground black pepper
1.00 ml mustard — powder

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a small ovenproof dish with margarine. Spread the slice of bread thinly with margarine and place in the dish. Spoon the cottage cheese on top. Sprinkle with chopped walnuts and place the vegetables on top. Sprinkle with a little Cheddar cheese. Beat the egg and milk and season to taste with salt and pepper and mustard powder. Pour egg mixture over the Cheddar cheese. Bake for 15-20 minutes or until the egg mixture sets.
Serves 1.
