This vegetarian pizza is perfect for meat-free Monday and so simple to make.

Ingredients (8)

1 onion — large, sliced
100 ml sweet chilli sauce
4 pizza bases — ready made
250 g butternut — cubed, roasted
60 ml sun-dried tomatoes
400 ml mozzarella cheese — grated
30 ml pine nuts
125 ml feta cheese — crumbled

Method:

Oventemperature: 180 °C

Sauté the onion in the olive oil until translucent and golden in colour.
Spread the sweet chilli sauce on the pizza bases and top with the onion, roasted butternut, sun-dried tomatoes and mozzarella. Sprinkle with pine nuts and feta.
Bake in a preheated oven for 15 minutes or until the pizza base is crisp and golden. Serve with a mixed green salad.
