6.00 bread — seed loaf, sliced, toasted
60.00 ml hummus
0.00 watercress — handful
2.00 carrots — peeled, grated
10.00 lemon juice
4.00 tomatoes

Method:

Spread each slice of bread with hummus.
Gently mix the watercress, grated carrot, lemon juice and oil in a bowl. Spoon the carrot mixture onto 4 of the slices of bread and top with the tomato slices. Put 1 slice of bread with carrot mixture topping on top of another slice with
carrot mixture topping. Repeat the above for the second sandwich. Top each sandwich with a
slice of bread, hummus-side down. Press the bread slices together gently and serve the sandwiches as they are or quartered.
