Vegetarian club sandwich

    slices seed loaf, fresh or toasted
  • 60
  • a large handful of watercress
  • 2
    carrots, scraped and roughly grated
  • 10
    lemon juice
  • 20
    olive oil
  • 4
    tomatoes, sliced


Spread each slice of bread with hummus. Gently mix the watercress, grated carrot, lemon juice and oil in a bowl. Spoon the carrot mixture onto 4 of the slices of bread and top with the tomato slices. Put 1 slice of bread with carrot mixture topping on top of another slice with carrot mixture topping. Repeat the above for the second sandwich. Top each sandwich with a slice of bread, hummus-side down. Press the bread slices together gently and serve the sandwiches as they are or quartered.
