Vegetables in tomato and basil sauce

    olive oil
  • 3-4 cloves garlic, crushed
  • 400
    green beans, trimmed and halved lengthways
  • 2
    yellow peppers, deseeded and cut into strips
  • 400
    courgettes, trimmed and cut into sticks
  • 1 x 425 g can plum tomatoes, chopped
  • 50
    fresh basil, shredded (or 5 ml dried)


20 minutes

Heat the oil in a saucepan.
Add the garlic and sauté until it is a pale golden colour.
Add the beans and stir to coat in the oil.
Cover with a lid and allow to simmer over a medium heat for five minutes.
Add the peppers and simmer for a further two minutes.
Add the remaining ingredients and simmer, uncovered, for 10 minutes.
Season with salt and freshly ground black pepper.
Serve hot.
