Vegetable stir-fry

    extra-large eggs
  • 1
    onion, sliced into rings
  • 5
    ground ginger
  • 100
    fresh mushrooms, halved
  • 100
    broccoli, broken into florets
  • 100
    mange tout
  • 100
    green beans, topped and tailed
  • 15
    soy sauce
  • salt and pepper


Whisk the eggs. Heat a little oil in a pan and pour the eggs into the pan. Heat until the egg mixture has set, as for an omelette. Carefully remove from the pan with an egg lift. Roll up and cut into thin slices. Set aside. Sauté the onion in a little heated oil until soft. Add the ginger and stir-fry for another minute. Add the remaining vegetables and stir-fry until just tender but still slightly crisp. Pour over the soy sauce and mix. Season with salt and pepper to taste. Sprinkle the omelette rolls on top and serve. Serves 4.
