Vegetable salad with pork fillet

Ingredients (18)

1 pork fillet
2 Tbs nomu — pork rub
fresh sage — handful
lettuce
cocktail tomatoes
cucumber — Israeli, thinly sliced
celery — finely sliced
yellow pepper — sliced
mushrooms — sliced
olives
2 eggs — hard-boiled
carrots — peeled, julienned
avocado
DRESSING:
fresh chillies — 573
balsamic vinegar
balsamic reduction — Verlaque with pomegranate
1 tsp Dijon mustard
salt and freshly ground black pepper — to taste

Method:

Salad and Pork:
Slice pork fillet.
Fry in Nomu pork rub and a handful of fresh sage leaves.
Boil eggs till hard, remove shells and slice.
Slice and chop other vegetables and layer in a bowl.
Top with pork.

Dressing:
Mix all the dressing ingredients together.
Serve over salad.
