Vegetable salad

  • 1
    vegetables (cauliflower, broccoli, sweet peppers, baby marrows, red cabbage, mushrooms, baby corn)
  • 50
    olive oil
  • roast vegetable seasoning
  • 100
    feta cheese


Cut the vegetables into uniform chunks and place in a microwave-proof dish.
Add the olive oil and sprinkle to taste with the seasoning.
Microwave at 100 percent power until the vegetables are just done but still slightly crisp - about 7 minutes, depending on the kind of vegetables.
Stir occasionally.
Leave to cool until lukewarm or at room temperature before crumbling the feta cheese on top.
