Ingredients (10)

500.00 g macaroni
1.00 onion — sliced into rings
30.00 ml oil
5.00 ml curry powder
5.00 ml garam masala
5.00 ml cumin — ground
chilli powder — pinch
1.00 kg mixed vegetables — frozen
2.00 potatoes — peeled and diced
salt — to taste

Method:

Cook the pasta in rapidly boiling salted water till just soft. Drain and set aside.
In a large saucepan, sauté the onion in heated oil till just soft. Add the curry powder, garam masala, cumin and chilli powder and stir-fry for about a minute. Add the vegetables and potatoes, mix, reduce the heat and simmer till the vegetables are just tender. Add a little water if necessary. Season with salt to taste. Add the macaroni and mix. Heat till warmed through.
Serve with grated cheese.
Serves 8.
