1.00 beetroot — large
1.00 sweet potatoes — large
1.00 aubergine
1.00 courgettes
1.00 butternut — small
oil — for frying

Method:

Peel the vegetables and slice them into very thin strips.
Heat the oil and add the vegetables a few at a time. Cook until golden and drain the chips on paper towel.
Sprinkle with salt to taste and serve immediately.
