Vegetable and fish bake

    wholewheat breadcrumbs

    frozen hake, defrosted
  • salt and freshly ground black pepper to taste

    broccoli, broken into florets
  • 1
    onion, sliced into rings
  • 1
    green pepper, seeded and diced
  • 4
    potatoes, skinned and diced
  • 410
    whole tomatoes, chopped
  • few knobs butter


Preheat the oven to 180ºC (350ºF). Spray a large, ovenproof dish with non-stick spray. Sprinkle half the breadcrumbs in the bottom of the dish. Arrange the fish on top of the breadcrumbs and season with salt and pepper. Surround with the broccoli florets. Sauté the onion, green pepper and potatoes in a little oil until soft. Add the tomato and simmer for a few minutes. Spoon the entire mixture over the fish, sprinkle with leftover breadcrumbs and dot with butter. Cover the dish with aluminium foil and bake for about 20 minutes, or until the fish is done and is easily flaked with a fork. Serve with a salad. Serves 4.
