Vegan's Breakfast bonanza

    x 400 g cans cannellini beans, drained and rinsed
  • 1
    fat clove garlic
  • 1
    small onion, thinly sliced
  • 2
    whole red chillies, slit
  • 15
    tomato paste
  • 1
    x 410 g can chopped tomatoes

    Balsamic vinegar
  • 6
    black mushrooms, thickly sliced
  • 30
    olive oil
  • salt and milled pepper

    Bella tomatoes (more or less as desired)


20 to 25 minutes
Preheat oven to 200°C.

Place all the ingredients except the fresh tomatoes in a baking dish, season well and bake for 20 to 25 minutes.

Toss in tomatoes and bake until just beginning to burst, about five minutes.

Serve with toast.
