Ingredients (9)

500.00 g tripe — cleaned
800.00 ml water
60.00 ml sunflower oil
1.00 onion — chopped
10.00 ml garlic — cloves, crushed
0.50 red pepper — sliced into strips
0.50 yellow pepper — deseeded and sliced
250.00 ml wine — dry white
250.00 ml coat and cook-in-sauce

Method:

1. Cover tripe with water, bring to the boil and simmer for
3 hours, or until soft.
2. Drain and remove tripe from saucepan. Cut into strips
and keep warm.
3. Heat oil in a saucepan and sauté onion, garlic and
peppers until soft.
4. Add cook-in sauce and wine, and return tripe to
saucepan. Cook for a further 20 minutes.
5. Serve hot over samp.
