    Mediterranean cucumbers

    Greek yoghurt
  • 25
    extra-virgin olive oil
  • 4
    cloves garlic, crushed
  • 1/3 bunch fresh mint, finely sliced

Peel the cucumbers and remove the seeds. Finely dice the cucumber and mix with the rest of the ingredients. Leave to stand for 30 minutes to allow the flavours to develop.
