Twenty Minute Spaghetti

Method:

Serves 4

Preparation time: 10 minutes

Cooking time: 20 minutes

  • 450g steak
  • 100ml olive oil
  • 50ml red wine vinegar
  • 200g cherry tomatoes
  • 400g spaghetti
  • handful rocket leaves
  • 200ml parmesan cheese, grated

1 Cut the steak into thin strips and season well with black pepper and a splash of olive oil. Seal the steak strips, a few at a time, in a very hot pan until just cooked. Spoon out the meat, pour the vinegar and tomatoes into the same pan and leave to sizzle. Remove from the stove, add the meat to the tomatoes and taste for seasoning.

2 Cook the pasta according to the packet instructions until al dente. Mix with the remaining olive oil and season. Now add the meat, tomatoes and rocket, stir through and serve hot, sprinkled with parmesan.
