Turkey croquettes

  • 1
    onion, finely diced
  • sunflower oil and butter for frying

    cooked turkey or chicken
  • 250
    mixed cooked vegetables
  • 2
    potatoes, cooked
  • 1
  • salt and milled pepper
  • cornflake crumbs or breadcrumbs to coat
  • sunflower oil for frying


Sauté onion in a little oil and butter until glossy. Shred meat and chop or mash vegetables and potatoes. Mix with onion and egg. Season to taste. Roll into croquettes, coat with cornflake crumbs and chill for about 10 minutes. (Chilling helps to prevent crumbs falling off during frying.) Heat oil and fry croquettes on both sides until golden, about 8 minutes Serve with cranberry sauce and vegetables. TOTAL KILOJOULE COUNT: 4 540 kJ (1 085 Cal). A portion: 1 135 kJ (270 Cal).
