Ingredients (14)

tomato sauce
1.00 onion — medium
25.00 fresh chillies — 573
3.00 tomatoes — ripe
75.00 ml tomato purée
5.00 ml sugar
salt and freshly ground black pepper
1.00 bay leaves
1.00 fresh thyme
6.00 pita breads
350.00 g turkey — shredded
150.00 g mozzarella cheese
3.00 avocado
lemon — cut into wedges

Method:

Prepare tomato base: Chop and slowly cook the onion in oil until transparent.
Skin, seed and chop tomatoes, add together with purée, seasonings and herbs.
Simmer gently without lid until thick and reduced, then push through a metal sieve or purée in a food processor.
Divide and spread generously over pita breads.
Top with shredded turkey, grated mozzarella cheese and seasoning. Brown in a hot oven (200 ºC) for 8 to 10 minutes.
Remove from oven and arrange sliced avocado on the hot pizzas.
Serve immediately with lemon wedges on the side.
