500 g tuna — raw, thinly sliced
DRESSING:
1 garlic — cloves, crushed
lemon — zest and juice
1/2 red chilli — deseeded, sliced
1 tsp castor sugar
1/4 cup fresh chillies — 573
1/4 cup fresh Italian parsley — chopped
sea salt and freshly ground black pepper
TO SERVE:
capers
lemon — zest only
lemon — cut into wedges

Method:

In a small bowl, whisk together dressing ingredients.

To serve, arrange tuna on serving plates, drizzle with dressing and garnish with extra parsley, caper berries, lemon zest and lemon wedges.
