Ingredients (11)

1.00 kg tuna — fresh
MARINADE
10.00 ml sea salt
25.00 ml vinegar — white
1.00 bay leaves
3.00 garlic — cloves, crushed
1.00 cinnamon — stick
fresh herbs — parsley, thyme and oregano
2.00 ml allspice
5.00 ml paprika
5.00 ml cumin — ground
250.00 ml wine — red

Method:

Rinse the tuna and remove the skin and bones. Cut the fish into slices 1,5 cm thick and arrange in a large dish.
Blend all the ingredients for the marinade and pour over. Marinate, preferably overnight, but for at least 3 hours.
Heat the oil in a pan and fry the tuna slices until done. Remove from the pan.
Pour off most of the oil and pour the remaining marinade into the pan.
Reduce until the sauce thickens slightly and serve with the tuna slices.
