Tuna rissoles with wasabi mayonnaise

Ingredients (11)

370.00 g solid tuna in brine-drained
30.00 ml soy sauce
2.00 eggs
30.00 ml cornflour
freshly ground black pepper
sunflower oil — for frying
1.00 cucumber — ribbons
4.00 pita breads — grilled
WASABI MAYONNAISE
45.00 ml sour cream
15.00 ml mayonnaise
10.00 ml wasabi — paste

Method:

MAYONNAISE: Mix sour cream, mayonnaise and wasabi paste. Set aside while making rissoles.
In a medium-size bowl combine tuna, soy sauce, eggs, cornflour and pepper. Divide mixture into 4 portions and roll into rissoles.
Heat oil in a large frying pan, add rissoles and fry for 3 minutes on each side, or until golden brown and just firm to the touch. Remove from pan.
Top pita breads with cucumber ribbons, place a rissole on top of each and add a dollop of mayonnaise. Serve hot or cold.
