Ingredients (13)

2.00 stock cube — vegetable
350.00 g pasta — risoni
60.00 ml oil
1.00 lemon juice
60.00 ml mayonnaise
1.00 garlic — cloves, crushed
1.00 cucumber — sliced
1.00 red pepper — or green, chopped
8.00 olives — black, pitted and halved
6.00 gherkins — sliced
185.00 g tuna — chunks tinned in water, drained
2.00 eggs — hard-boiled, chopped
4.00 pita breads

Method:

1. Dissolve stock cubes in one litre hot water and pour into a saucepan. Add risoni and cook according to pack instructions until tender. Drain and cool.
2. Mix oil, lemon juice, mayonnaise and garlic and mix lightly into the risoni.
3. Add cucumber, red pepper, olives, gherkins, tuna and egg slices and toss lightly. Serve with pita breads.
