Tuna burgers

Ingredients (12)

2 potatoes — cooked and mashed
15 ml lemon — zest only
10 ml lemon juice — fresh
2 can tuna — tinned in brine, shredded
1 bunch spring onions — finely chopped
375 ml breadcrumbs — fresh
1 red chilli — chopped
80 ml mayonnaise
sea salt and freshly ground black pepper
2 eggs — beaten
100 g breadcrumbs — dry
oil — for frying

Method:

Combine the potato, lemon peel, lemon juice, tuna, spring onions, fresh breadcrumbs, chilli, mayonnaise and salt and pepper in a mixing bowl. Mix well and shape into burger patties.

Dip the patties in the beaten egg and then in the breadcrumbs. Place on a baking tray and allow to rest for about 20 – 25 minutes.

Heat the oil in a frying pan and fry the patties over moderate heat until golden brown on both sides.

Serve on hamburger buns with lettuce, tomato slices, thinly sliced onion rings and a spoonful of mayonnaise.
