Tuna bites with greens

    x 170 g tuna in oil
  • 0.50
    small chopped onion
  • 4
    chopped gherkins
  • 60
    chopped fresh coriander
  • 30
  • 30
    lemon juice
  • salt and pepper to taste
  • baby spinach leaves
  • fresh coriander leaves, to garnish


Drain the tuna and mix with the onion, gherkins, coriander, mayonnaise and lemon juice.
Season with salt and pepper.
Spoon a little of the mixture onto baby spinach leaves and garnish with fresh coriander.
