100.00 g cake — crumbs
60.00 g almonds — ground
30.00 g white granulated sugar
100.00 g chocolate — drinking
200.00 g milk chocolate
5.00 ml rum — essence
100.00 ml jam — smooth, apricot
chocolate — vermicelli
dessicated coconut
nuts — or almond nibs
YOU WILL ALSO NEED
1.00 dowelling stick, twice the height of the container
1.00 silver or gold ribbon
thin florist's wire
edible decorative balls — silver
prestik
suitable container (earthenware, ceramic or plastic) — utensil
1.00 round polystyrene ball, available from florist wholesalers
golden cyprus or similar foliage
60.00 toothpicks (round, not the flat type)

Method:

1. Combine cake crumbs, ground almonds, sugar and drinking chocolate in a mixing bowl and mix well.
2. Melt the chocolate over a low heat or microwave for 2 minutes on medium. Add to the dry ingredients and stir together with rum essence.
3. Add enough warmed apricot jam to make a stiff mixture.
4. Using the palms of your hands, roll small pieces of the mixture into 35 mm size balls.
5. Roll the balls in the chocolate vermicelli, coconut and nuts.
6. Refrigerate for 2 to 3 days before assembling. Assemble a few hours before serving.
Makes 35 truffles.
TO ASSEMBLE
1. Cover the stick with gold or silver ribbon. Secure at top and bottom with Sellotape.
2. Make approximately 15 small bows using gold and silver ribbon. secure with florist’s wire.
3. Have ready small sprays of foliage.
4. Break the toothpicks in half.
5. Stick the toothpicks into the polystyrene ball at intervals.
6. Carefully position the truffles onto the toothpicks. They should be close enough to one another to almost touch.
7. Make small bows using the gold and silver ribbon. Secure with thin florist’s wire. Position the bows between the truffles.
8. Have ready the earthenware pot or container, with a large piece of Prestik secured in the base (to anchor the topiary tree).
9. Very carefully press the base of the stick into the Prestik.
10. Fill the container with small pine cones, baubles and balls.
