Tropical summer salad

  • 1
    butter lettuce
  • 2
    small papinos
  • 8
    rashers rindless back bacon
  • 150
    feta cheese, crumbled
  • olive oil
  • fresh lemon juice
  • milled black pepper to taste


Wash lettuce and arrange on 4 individual plates or 1 large platter. Peel and seed papinos. Slice and arrange alongside lettuce. Grill or fry bacon and chop into bite-sized pieces. Arrange on plate with feta cheese and drizzle olive oil and lemon juice over. Season with milled pepper and serve with crusty wholewheat bread. TOTAL KILOJOULE COUNT: 6 095 kJ (1 455 Cal).
