Ingredients (10)

200.00 g sponge finger biscuits
410.00 g pears — halved
410.00 g guavas — halved
410.00 g apples — pie
Goldcrest Marachino Cherries
pecan nuts
1.00 Litres custard — thick
80.00 g jelly — strawberry flavour
80.00 g jelly — lime
250.00 ml cream — whipped

Method:

Arrange a layer of finger biscuits in the bottom of a glass bowl. Top with a layer of fruit and pour over a little of the fruit juice. Intersperse with a few cherries and sprinkle with pecan nuts. Pour over a layer of custard.
Slice the set jelly into cubes and sprinkle on top. Otherwise, pour a little liquid jelly over the ingredients in the bowl and leave it to set with the fruit before assembling the next layer.
Repeat the layers till all the ingredients have been used, reserving a few pecan nuts, finger biscuit and cherries for decoration. Decorate with piped cream rosettes and the remaining ingredients. Chill.
Serves 8-10.
