Traditional custard

  • 565 ml milk
  • 1 vanilla pod, split
  • 5 eggs
  • 5 ml cornflour
  • 60 ml castor sugar


Pour milk into a heavy-bottomed pan and scrape the seeds from the vanilla pod.
Over a medium heat, bring milk to a mere simmer.
Whisk eggs, cornflour and sugar until well mixed and pour into the hot infused milk.
Return the mixture to the pot and stir until it thickens.
Pass the custard through a sieve into a jug and keep warm if serving warm.
